First Impressions

Excellent sharpness and grind right out of the box and the Silver 3 steel core provides a wicked edge that will glide through food with ease.

Beauty

It's subtle but has a wonderful depth to it and aesthetically the Ginsan is a a fine looking knife. The brushed finish and polished edge form a lovely line showing the merging of core and cladding steel.

In Hand

Across the range, the various knives all share a common, slightly heavier than typical feel in hand from the generous thickness of the spine but without losing the easy handling nimble feel you're looking for.

Durability

The Silver 3 core is comparable to many carbon steels for sharpness and edge retention and is a steel that's grown significantly in popularity in recent years largely because it's easy to care for and when well treated offers excellent edge retention.

Ease of Care

Normal care instructions apply as always - rinse and dry after use and no dishwashers but other than that you've got a nice low maintenance stainless knife thanks to the silver 3 core and stainless cladding. Easy!

Sakai Kikumori's repution for quality blades is well known and rightly so. The Silver 3 is a great line for those seeking a quality knife paired with a well finished handle and the grind and treat of the steel gives a superb and durable edge and the slightly heavier feel is ideal for those who do want to feel that bit of extra weight in hand while working but without it necessarily feeling like a heavy knife.
