About this range

First Impressions

Outstanding, right out of the box you'll be impressed with the profile and level of sharpness. This is a knife that punches above its weight.

Beauty

Classic looks with a kurouchi finish running down to a subtle migaki polish along the core AS steel this is a traditional style knife and paired with a simple but classy teak and black buffalo octagonal handle it's a great looking, no fuss knife.

In Hand

The AS line is relatively tall compared to many knives so definitely ideal for those seeking a little more height particularly in the larger all-rounders.

You might find the edges along the top of the spine and around the heel are a little square and would be a little more comfortable if they had been rounded off but it's a very minor thing and at this price point the quality of the edge and overall geometry is outstanding which is the important bit.

Durability

Hardened to around 63-64HRC the AS core gives you excellent performance and edge retention.

Ease of Care

With a reactive carbon steel core and clad in soft iron, you will need to follow our carbon steel care tips and for longer term care we recommend a carbon steel care kit to keep it in top condition.

Our Verdict

A true "no brainer" of a range, the Shiro Kamo AS is an excellent quality knife with impressive geometry and a thin edge giving you a high level of cutting performance and edge retention all at a price point that is one of the most competitive around.

It's very easy to recommend this one if you want a classic carbon steel knife.

Protection & care for this knife

Due to the height of this gyuto, we recommend the larger 270mm gyuto magnolia saya or a large gyuto (27x5.5cm) blade guard to protect it.
