About this range

First Impressions

A great hollow grind to a thin edge with a fairly minimal distal taper to aid food release and nicely balanced across the range. 

Beauty

We absolutely love the looks of the Ginsou, right from the moment we saw them the distinctive damascus finish catches the eye while still being a little understated. 

Depending on the knife in the range, kanji are either engraved by hand or laser etched and the finish on the cladding is either a cloudy one or more polished. Please consult the product photos for the knife you are viewing.

In Hand

The Ginsou is well finished with a nicely rounded spine and heel area for comfort and for the santoku and bunka sized chef knives they balance well just around the heel of the knife and the gyuto a little further forward - all ideal and comfortable for pinch grip use.

Durability

Treated to a hardness of approximately 62HRC, the Ginsou offers a good balance between edge retention without the fragility of significantly harder steel treatments and is a versatile choice for a wide range of jobs.

Ease of Care

Ginsan Silver 3 stainless steel is easy to sharpen and retains an edge well so it's a great choice for a long lasting knife and one that's also great as a gift option where low maintenance is a consideration.

Our Verdict

A quality option at a very competitive price point, Ginsan steel is a widely used modern steel that behaves and performs comparably with carbon steels but saves you the maintenance required with carbon steel so is a great choice for both home and professional kitchens. 

The Ginsou boasts an impressive profile and geometry and combined with what we think are great finishing looks is an all-round quality choice.
