Treated to a hardness seldom seen gives the ZDP189 one of the sharpest edges we've ever used, these knives will blow you away.

Designed by Oster Rob in Slovenia and Yoshida Hamono, the heart of the knives is made of ZDP-189 steel with an HRC of 66:67, which was selected because systematic testing has proven its superior qualities and long-lasting sharpness.

The steel is laminated with an external layer of softer stainless steel that makes it easier to care for and more durable. Such a blade remains sharp for a very long time, its softer external layer makes it easier to sharpen, and it also protects the core steel from external factors. 

The Kurouchi finishing of the blade, which is untreated at the tip and has an already developed dark patina, protects the blade and gives it a traditional Japanese look. The knife bears visible impressions of the hand-making process, which gives it a beautiful finish and also prevents food from sticking.
