About this range

First Impressions

Forged in a traditional way, the kasumi boasts an impressive edge right out of the box and is a good workhorse option particularly for busy professional kitchens.

Beauty

The migaki finish and smooth taper from shinogi down to the cutting edge are simple design and the machi gap to the magnolia handle finish the traditional look.

In Hand

A good amount of weight in the slicer is appreciated and will help guide the knife through smooth slices and there is a slightly rough finish in and around the heel which isn't unexpected in a range at this price point where more effort had gone into the blade edge finish but doesn't present any problems with comfort while holding the knife.

Durability

White #3 clad in soft iron is a durable and retains a good edge.

The magnoloia handle on the knife is untreated and while not essential, you might prefer sealing it with a food safe mineral oil to help protect it over time.
