Outstanding performance and finish, this is a fantastic quality mid-sized gyuto with an excellent profile and edge retention.

First Impressions

The edge on the SG2 range is excellent. Sukenari are praised for the quality of their knives across their ranges and skill working with super steels and you can immediately see why. 

Right out of the box, this is very clearly a top level knife.

Beauty

There are two finishes available in the SG2 line, the classy and understated hairline migaki finish and an eye catching highly polished near mirror suminagashi finish so depending on your preference for visual impact you have a great decision to make!

The knives are then paired with octagonal bocote wood handles that have their own unique and distinctive patterns look great without being over the top.

The handles are finished with either a black or marble colour buffalo horn bolster.

In Hand

This is a range that has a feel of substance in hand, the bocote handle is a slightly longer than usual size and as a hardwood is quite dense and adds a nice feel of weight but without being too unbalanced.

Depending on the size of the gyuto the balance point of the knife is just ahead of the heel on the shorter knife and between the heel and large kanji on the larger knives and each feels well balanced and nimble in a pinch grip even with the larger gyuto. 

Durability

Sukenari harden their knives to an impressive level and they push the limits with this line too, the edge retention of the SG2 is excellent while offering a good balance of robustness without being too brittle.

Naturally you still need to cut carefully and don't go prising open that tin on the worktop but with correct technique and care the edge will last well between sharpening sessions.

Ease of Care

SG2 is a stainless steel and is easy to maintain and resharpen although Sukenari do treat this range to a slightly higher level of hardness than other makers so it may take a little longer to sharpen than other SG2 knives but otherwise you can follow our normal care instructions and this is a knife you will be using for many years.

For long term care we'd recommend a Japanese knife care kit.

Our Verdict

It's an absolute pleasure to be able to stock Sukenari knives, they represent some of the best craftsmanship in super steels and combine a superb finish with excellent edge retention.

While they do sit at a premium price price it's one that's justified and deserved so for those looking for a top standard knife for use in either a home or professional environment that holds an edge like few others then look no further.

A small workshop founded in 1933 and based in Toyama, Sukenari are led by 3rd generation blacksmith Nobuo Hanaki and are widely regarded not only for their traditional skills in making honyaki forged knives but also for their innovative work and making incredible blades from modern super steels.
