
Funayuki
The Funayuki is a traditional Japanese knife originally used by fishermen aboard boats—its name translates to "boat-going." Historically, it served as a versatile all-purpose blade for cleaning, filleting, and preparing fish directly at sea.
Over time, its utility and compact form made it popular in home and professional kitchens alike. Funayuki knives typically feature a thinner, lighter blade with a pointed tip and slightly curved edge, making them well-suited for delicate slicing and general prep work.
They're often forged using high-carbon or stainless steels and shaped in either single or double bevel profiles, depending on regional traditions. Today, Funayuki knives are prized for their balance, agility, and suitability for both fish and vegetable preparation.
