Based in the historic city of Sanjo, Niigata Prefecture—an area renowned for centuries of blacksmithing excellence—Gihei Hamono has been producing exceptional Japanese knives for over three generations, with roots dating back to the early 1920s. Originally established to serve the demands of local farmers and craftsmen, the workshop has evolved into a highly respected name in the world of premium kitchen cutlery, all while preserving the artisanal techniques that define traditional Japanese blade-making.

Under the stewardship of 3rd and 4th generation father-son pair Atsushi Hosokawa-san and Takashi Hosokawa-san, Gihei has built a reputation for uncompromising quality and innovation grounded in time-honored methods. Their approach bridges the old and the new, blending meticulous hand-forging techniques with a willingness to experiment with modern steels. This duality has helped Gihei create blades that are not only beautiful but also high-performing and durable.

One of Gihei's standout qualities is their mastery of advanced tool steels, particularly HAP40 and ZDP-189—steels that are notoriously difficult to work with due to their extreme hardness and temperamental forging requirements. While many makers shy away from these alloys, Gihei has earned a loyal following for their ability to bring out the best in these high-performance materials, producing knives that maintain incredible edge retention without sacrificing sharpenability.

Despite their global popularity, Gihei Hamono remains a small, family-run forge. Each knife that leaves their workshop is the result of countless hours of dedication, and reflects a century-old commitment to precision, passion, and craftsmanship.
