Stunning looks and performance to match, this mid sized gyuto is a light and nimble chef knife for every day use and well suited to larger jobs too.

First Impressions

An eye catching knife on many levels, the finish is excellent as you'd expect from Jikko and with an impressive thin, flat grind and minimal taper it cuts beautifully.

Beauty

Jikko knives are often quite recognisable because of the effort they put into the small finishing details around the heel and spine of their blades. 

The finish is smooth, aesthetically pleasing and adds significantly to the comfort of the knife in use and the single piece cherry wood curved handle and subtle migaki finish running down to the core steel is *chefs kiss*.

In Hand

In use, this is a collection of lightweight and nimble knives, the handle shape does take a little getting used to if you have developed a muscle memory for the feel of a more traditional octagonal or oval wa handle but after a little use it's comfortable and with the quality finish around the heel of the blade it's a very enjoyable collection of knives to use.

Durability

Treated to around 61-62HRC, the VG10 core is hard enough to offer good edge retention between sharpening and robust enough to not stress too much about chipping (assuming you're still cutting with care of course!). 

It'll take an edge quickly and easily and is a solid and common steel choice for many knives for this reason.

Ease of Care

Follow our normal care instructions and this is a knife that will serve you well for many years as it's a stainless core clad in stainless steel so there's not too much to worry about here.

For longer term care of this knife we recommend a Japanese knife care kit.

Our Verdict

Beautiful knives made and finished to a very high standard from Jikko that marry good looks and performance in an easy to care for stainless steel.

If you're looking for a high quality knife where the attention to detail is plentiful and that's easy to care for and maintain then this is certainly a one to shortlist.
