Jikko Knives

With more than 100 years knife making experience, Jikko are widely regarded as one of the finest knife makers in the city of Sakai. Jikko cutlery have long produced high quality and simply designed knives with a focus on quality steel, traditional shape and style and and a high attention to detail that ensures the cutting edge is always excellent.

Established in 1901, Jikko knives are based in Sakai, Osaka prefecture, a city famous for knife manufacturing. As one of the oldest manufacturers Jikko have a great reputation. They consult with chefs across Japan to find out what they need in a high quality knife and use that research to design and develop their knives.

They created, after many years of research, a special finishing method called the ‘Hatsuke’ method which they claim makes their knives even sharper and allows for greater edge retention.
