About this range

First Impressions

Out of the box, performance is good and the cutting smooth without needing any real work although as with most knives a couple of passes on a strop would give you a little extra performance if you wanted a quick and easy edge boost.

Beauty

This is a traditional knife with a subtle nashiji finish running down to the shinogi line and a migaki finish showing off the core which will develop a great patina with use and contrast the stainless cladding nicely.

In Hand

While perfectly good quality, the burnt magnolia and plastic ferrule are comfortable but quite standard oval handles. In hand the knife is well balanced and nimble with a slightly smoothed choil and spine feeling comfortable while holding the blade. 

Durability

You'll have no problems with long term use, the 3 layer blue #2 core and stainless cladding construction provides a durable edge and will patina nicely with use over time.

Ease of Care

Follow our normal and carbon steel and general care tips and this is a knife you'll enjoy for many years.

Our Verdict

Good performance, a quality heat treatment of the blue #2 steel giving both edge retention and durability in a classy but understated finish overall. A very affordable and quality option for both home and professional use.

Based in Sanjo, Gihei Hamono is led by fourth generation head knife maker Atushi Hosokawa-san and his son Takashi and have been creating quality blades since the 1920's. They are an innovative and forward thinking company who specialise in working with modern high performance steels as well as traditional materials.
