The absolutely beautiful fit of the one piece urushi lacquered handle paired with the exceptional ginsan steel on this versatile kiritsuke tipped petty make it a one of our personal favourite collections and one you simply have to check out!

We have this single piece and it's listed as non-standard only because the handle has been fitted with a machi gap and the normal ginsan line is fitted without this gap. In all other respects the knife is of the normal finish level and quality. The knife was made by Yamatsuka-San and sharpened by Maruyama-San.

What is a "non-standard" HADO knife?

HADO are well known for their exacting attention to detail, fit and finish so when we are occasionally able to source any non-standard knives, it simply means it would be a knife that doesn't exactly match the standard size, thickness or shape of the other knives in the range so you might find a slightly shorter knife, one that's a fraction thinner on the spine or with a slightly forward facing heel instead of straight. It might even be a perfect knife but just one with limited availability. 

All the knives are still made and finished to a standard HADO are satisfied with but due to these small differences they are marked as non-standard.

Please note that when buying a non-standard knife, it is limited to only what we have available and the reason for it being non-standard is clearly listed. Your 30 day money back guarantee remains the same as with all purchases on the site but we cannot exchange the knife for a different model.

First Impressions

Straight out of the box you can just tell the ginsan is a great collection of knives. They measure very well on the sharpness tester and in hand they're well balanced and nimble.

Beauty

These are beautiful knives. Certainly understated but they bear close scrutiny and up close you can see the quality and skill in each and every one. 

The polished finish and excellent finishing to expose the core steel along the cutting edge is very well done and pairs nicely with both the cherry wood and walnut handles.

In Hand

Light and well balanced, the ginsan is a joy to use from the small petty through to the gyuto they're comfortable and nimble.

Durability

Ginsan Silver 3 stainless steel is easy to sharpen and retains an edge well so it's a great choice for a long lasting knife.

Ease of Care

With many of the properties of carbon steel but with the convenience of stainless ginsan is easy to look after and care for so just follow the standard care tips and you're good to go!

Forged by a very skilled blacksmith and finished by an excellent sharpener the blade quality is excellent and when you add the ease of sharpening and stainless properties of the ginsan steel we think these stunning knives are a very sound investment and addition to any collection.

Yamatsuka-san is one of a fairly small number of Sakai blacksmiths who choose to work with ginsan steel his knives are beautifully made and the finishing grind and sharpening from Maruyama-san ensure each one is of an exceptional quality.
