First Impressions


Translating to "Grey Heron" the Aosagi from Hatsukokoro is an impressive Sakai made, hand forged workhorse with a flat grind running to a well finished edge and a light taper from heel to tip.

Beauty

The hazy kasumi finish of the core Blue #2 steel and contrasting kurouchi cladding are subtle and well finished for knives at this price point. 

These are knives with an unfussy traditional look and feel and contrasted nicely by the immensely stylish olive wood handles - we are big fans.

In Hand


The heel of the blade has been rounded off a little to enhance comfort but in keeping with the very traditional hand forged nature, the spine has not been but overall the Aosagi is a nice mid weight knife to work with.

Durability

Edge retention for the Aosagi thanks to the heat treat to ~63HRC is good and with the robust Sakai workhorse profile that performance will last well between sharpening sessions. 

Ease of Care & Maintenance Tips

Both the core and cladding (soft iron) are reactive steel so this knife does require care between uses to ensure it's washed and dried as with all carbon steel knives while a protective patina forms. 

Blue #2 steel is easy to sharpen and develops a good edge relatively quickly on a whetstone when it's time to sharpen.

Our Verdict

Definitely another quality knife at a very competitive price point from Hatsukokoro. Ideal for anyone who's looking towards more of the thicker workhorse profile but without it being overly thick. 

Thin behind the edge and well finished overall the Aosagi is an enjoyable knife to use and over time will develop a great patina too.
