First Impressions

A sleek and lightweight range, the Ginrei benefits from a slightly hollow grind and is particulary thin behind the edge which delivers impressive performance straight out of the box.

Beauty

The subtle nashiji finish on the stainless cladding running down to the polished ginsan core steel is a great look for those who want a bit of visual interest but without being over the top.

We've paired these knives with a simple but classic single piece octagonal ebony wa handle.

In Hand

The Ginrei is a relatively thin knife across the range and so feels light in hand with a balance generally quite close to the heel of the knife depending on the size.

Performance at this price point is impressive and food release is good.

Durability

This is a knife designed to be robust and the Silver 3 core clad in stainless holds is a becoming a more common combination for the edge retention quality and ease of care. The 61 HRC gives you a bit of edge robustness you don't always get with a higher hardness steel.

Ease of Care & Maintenance Tips

You'll find Silver 3 holds an edge well and is easy to sharpen so just follow our normal care instructions and we'd suggest checking out a stainless steel knife care kit for longer term maintenance.

Our Verdict

Excellent value and a qulity design, edge finish and overall balance.

The Ginrei is an excellent choice for an easy to care for and maintain first Japanese chef knife, gift for a keen cook or a great value addition to an existing collection.
