Boasting an understated punch with a hazy finish on the stainless steel cladding that runs down to the mirror polish on the core steel cutting edge, they're subtle, classy and will only get better over time as the exposed core steel develops a patina with use.

In Hand

You'll find across the range that the Kaijin is a lightweight knife and while the heel and spine of the blades don't quite have the high level of rounding and smoothing you might find on more expensive knives, they're comfortable and well balanced and thanks to that thin profile cut smoothly through a wide range of produce.

Heat treated to around 62HRC, the classic combination of Blue #2 core steel clad in stainless is commonly used in many Japanese chef knives because it offers good edge retention and durability while being relatively easy to sharpen.
