A stunning and versatile shaped mid-sized gyuto with a finish that sparkles like the diamond dust it's named for!

First Impressions

These are high performing knives with a laser thin convex grind and light weight, they simply fall through food.

Without doubt these are beautiful knives, Saihyo translates to "diamond dust" and these certainly sparkle. The polished suminagashi damascus finish definitely draws the eye and if you're after a knife with a visual wow factor then this is one to check out.

In Hand

Light and well finished the Saihyo feels nimble and nicely  balanced and it's another in an impressive selection of collaborations from Hatsukokoro.

SG2 is easy to care for and has great edge retention properties and so it's a widely used choice for durable high performance knives.

Ease of Care

SG2 is a stainless steel and is easy to maintain and resharpen. Just follow our normal care instructions and this is a knife you will be using for many years.

Our Verdict

Beautiful design and an excellent laser grind make the Saihyo a stunning all rounder and if you're looking to treat yourself to an easy to care for and durable knife with a lot of visual wow factor then look no further.
