First Impressions

The Suzukaze SG2 is the epitome of a modern, high tech Japanese chef knife blending years of knife making experience with the latest machine production technology and materials to create a fantastic looking high performance knife finished by hand to ensure the quality and standards of Ono Knife company are upheld.

With a promarily flat grind and almost laser profile, the Suzukaze is very thin behind the edge but without feeling fragile and overall with the integrated bolster and heavier yo handle this feels like a hefty knife across the range but the performance and cutting feel light and easy. 

Beauty

We were definitely wowed when we opened the boxes for these knives, perhaps a combination of the tsuchime and damascus finishes with the highly polished blade and paired with the striking integrated bolster handles with metal end caps really are high up on the wow factor! 

In Hand

Cutting performance is excellent, the food release is good thanks to the thin overall profile and in hand as you might imagine from the handle and bolster construction they are heavier than wa handled knives and comparable to some full tang yo handled knives so most certainly a knife for anyone who wants a little heavier feel to their knives. 

Generally the balance point is a fraction behind the heel so handle heavy but not so much that they're not nimble and easy to work with that's for sure.

Durability

As a very modern knife, the use of SG2 steel for the core and clad in stainless they've been heat treated to around 62-63HRC as most SG2 knives are which provides an excellent balance of durability and edge retention. 

Ease of Care & Maintenance Tips

SG2 is a stainless steel and is easy to maintain and resharpen. Just follow our normal Japanese knife care instructions and this is a knife you will be using for many years.

Our Verdict

Truly a modern knife, the steel is a popular and ideal balance point of ease of care, performance and durability and the knives have been made to an incredibly exacting standard so if you're seeking rustic variety found in hand forged knives then you might not go for the Suzukaze (or indeed most SG2 knives which tend to be machine forged). 

However, if you're looking for a very well made and finished knife and prefer a heavier full tang type construction with the integrated bolster then this is a very well made and competitively priced knife offering quality and great looks.
