Made in the workshop of Kenji Togashi by his blacksmiths to the specification of Sakai Kikumori, this mid sized Blue #2 gyuto is a refined workhorse with impressive geometry and performance.

This knife has a very small chip out of the tip as shown in photos but is otherwise boxed and completely unused in new condition and is sold as advertised.

First Impressions

Made by the Togashi workshop to specification for Sakai Kikumori, the Blue #2 is a classy knife with a largely flat grind running down to an excellent thin secondary bevel.

These are quality daily driver in a Sakai style with a good finish standard ready for use in a home or professional kitchen.

Beauty


Understated certainly but the migaki finish is well done and consistent and over time the Blue #2 core will patina and add character to the blade. 

In Hand

Good quality magnolia and black buffalo handles are fitted and well finished and the blades also show the subtle signs of quality with their smoothly finished rounded heel and spines which is often a much appreciated finishing touch that elevates a knife in comfort.

Durability


Blue #2 and soft iron clad is a widely used traditional combination for making a durable knife with excellent edge retention and durability.

Ease of Care & Maintenance Tips
