First Impressions

The Kokusen is Yu Kurosaki's Aogami Super Blue line made in the distinctive "Ei" shape which provides additional height and clearance with the swooping design over the heel of the knives in the range.

The knives feature an excellent heat treat and high level of hardness for durability and edge retention with top class performance from the very thin edge and quality grind.

Beauty

With a design and tsuchime pattern much like the stainless Senko SG2 series, the Kokusen features a unique star like shape in the tsuchime finish and unlike most of Kurosaki's other ranges, the Kokusen has a light kurouchi finish so the dark contrast of the cladding and the edge looks fantastic.

You'll also find over time as the core steel develops a patina it will compliment that kurouchi cladding very nicely.

In Hand

The Ei shape on the larger chef knives in the range lends itself to a feeling of a big knife in general but these knives are also generally quite tall but with the thin profiles across the range they feel light and nimble in hand for the size.

Durability

The Super Blue core steel has been hardened to around 63-64HRC so offers a high level of edge retention and durability and these are knives that will perform well for extended peroids between sharpening.

Ease of Care & Maintenance Tips

The aogami super steel along the cutting edge is reactive and will develop a lovely patina as it reacts with your food and moisture but apart from the normal care instructions it's a nice easy knife to keep.

Check out our carbon steel care page for more tips on how to look after your knife and for long term care we recommend a carbon steel care kit bundle.

Our Verdict

Striking looks as you'd come to expect from Yu Kurosaki, the Kokusei is another collection of excellent knives from the Takefu master blacksmith.

The heat treat on the Super Blue steel core is excellent so edge retention and cutting performance is very good and we like that this range offers a little more of a rustic look to the finish with the subtle kurouchi on the cladding.
