About this range

First Impressions

A great workhorse range, with good balance and taper and a reasonable level of sharpness out of the box (more on this below).

Ideal for anyone seeking a traditional carbon steel knife that won't break the bank.

Beauty

If you were to picture a traditional Japanese carbon steel knife, the Ohishi would probably be pretty close to a common style. The kurouchi finish on the carbon cladding steel and polished edge that will patina over time are simple and paired with a nice D shaped oval wa handle you can't ask for more in a classic knife.

In Hand

The larger knives in the range are all designed to balance a little forward of the heel so ideal for pinch grip use and they sit just about in that comfortable middle weight point between a laser thin profile knife and bigger chunky workhorse. 

The d-shaped oval handle is technically designed to prioritise right handed use but is perfectly comfortable and suitable for left handers too.

Durability

The Aogami Kurouchi is designed to be a durable workhorse range and offers a good level of edge retention thanks to the 63-64HRC hardness so once you've got that edge up to speed it'll last well for a knife at this price point. 

Ease of Care

A Blue #1 core clad in carbon steel will be quite reactive and so you'll need to rinse and dry your knife between uses but it's easy to sharpen and for longer term care we'd recommend our Carbon Steel Care Kit.

Our Verdict

A great value, no fuss workhorse range from Ohishi made in a classic Tosa style - you'll enjoy excellent edge retention and durability at a very competitive price point.

The out of the box edge finish on these knives is a good example of a little compromise to achieve that price and it's not uncommon that one of these knives would need a quick finish to just put the final touch on them to bring out the best level of sharpness.

This is easily done with either a high grit whetstone or ceramic honing rod and strop and once you've got that edge it'll last well. 

Excellent value overall and well worth checking out if you'd like a classic Blue #1 knife in your collection.
