Excellent slicing and food release thanks to the zero bevel shape, this is a superb santoku that glides through food with ease.

First Impressions

Absolutely lovely. We're massive fans of the small numbers of knives we get from Goko Hamono's workshop and the SK5 is no different. There's just a feel to them that we enjoy as soon as they're in your hand. 

The grind is excellent and right out of the box the sharpness is very impressive and you'll be excited to start prepping your next meal right away!

Beauty

We often describe their knives as a little "rustic" in finish and the semi polished finish of the SK5 is in the same line as the other Goko Hamono knives so don't expect absolute perfection visually but if you want a fit and finish that is unmistakably high quality but retains the obvious signs of being entirely hand forged then look no further.

In Hand

Well balanced and the Western handle offers a little extra weight but it's still light, nimble and comfortable in hand.

Durability

SK5 is a carbon steel that typically offers a good balance between hardness and durability so it's a knife that's built to last.

Ease of Care

This is a knife for those who love a patina, it's a highly reactive mono steel construction and will develop a truly unique patina on each one so you can enjoy a knife that will reflect the foods you love preparing over time.

Please note that due to the mono steel construction, this knife is "zero bevel" which requires a slightly different sharpening technique on your whetstones. (Learn more here )

You will need to be on top of washing and drying your knife after use with SK5 steel and follow our normal carbon steel care tips

Our Verdict

The quality of these knives is in the grind and geometry and they're excellent right out of the box and show the attention you would expect from a smaller workshop and with the lack of a secondary bevel due to the mono steel construction you're getting a truly sharp knife with excellent food release.

These are knives that require more care and maintenance than a lot of others but you'll be rewarded handsomely if you do. 

We love Goko Hamono knives and the SK5 is another excellent knife that's great value for money for someone looking for a very reactive steel and is quick enough to buy one when they're in stock!
