About this range

First Impressions

With plenty of weight and thickness the AUS8 blade is hard enough to make light work of anything but not so hard it's going to chip.

The single bevel allows for an excellent edge and if you're looking for pure chopping power to compliment your Japanese knives then look no further.

In Hand

The single bevel cleaver is ground for right handed use.

Durability

AUS8 is a common choice for Japanese cleavers because it's typically hardened to about 58-59HRC which allows for it to take and retain a great edge but soft enough to avoid damage that would be caused on harder steels.

Ease of Care

Rinse and dry after use and store safely. AUS8 is a stainless steel so caring for it is very easy.

Our Verdict

If you're in need of pure chopping power then the various sizes of Japanese cleaver are an ideal compliment to your other Japanese knives and the AUS8 is a good option.

There are cheaper cleavers available but quite often they're a bit softer and will require more regular sharpening during use but we expect the AUS8 will retain a better edge than many of the cheaper varieties available out there.
