Hatsukokoro SLD Kurouchi Blast Gyuto 240mm

With a flat grind and subtle distal taper with a particularly thin tip it's a great workhorse with a unique kurouchi finish and smooth cutting performance and is equally capable of intricate work as it is using on larger ingredients.

This is an impressive knife in every respect and the feeling of significant weight in hand suits those who prefer a heavier knife that's balanced just around the heel.

First Impressions

A flagship knife from designed by Hatsukokoro made in partnership with Nigara Hamono, the SLD Kurouchi Blast is as much a work of creative skill as it is a high performance knife.

Beauty

Eye catching to say the least, the kurouchi finish is contrasted by a distinctive polished core steel pattern running horizontally along the blade down to the SLD core steel.

Paired with a subtle, high quality ebony and white buffalo horn handle, this is definitely a looker!

In Hand

There's a feel of quite significant weight in hand so definitely suited to those who prefer a heavier workhorse over a laser.

Durability

SLD is a high performance steel which offers a carbon like level of edge retention and performance combined with the ease of care of a very stain resistant steel so the 61HRC treated steel is a great combination of durability and edge retention.

Ease of Care & Maintenance Tips

As a semi-stainless steel, SLD is perhaps as close to being stainless as you can get so caring for it is pretty straightforward if you just follow the normal care instructions for any Japanese knife.

It's also very easy to maintain and sharpen in comparison to its similarly hard and high performance carbon steel counterparts.

The kurouchi blast finish is one that has been left from forging and as such does have some rougher parts to it and we'd definitely recommend thoroughly washing and scrubbing the blade before you start using it.

Our Verdict

A uniquely finished range made to a very high standard in small batches for Hatsukokoro.

While it's perhaps more for the collectors of rarer pieces, it's absolutely made and intended for use too and is a high quality and high performance knife in every respect.
