First Impressions

Obviously the striking range of full tang integrated acrylic handles will draw the eye first but Hatsukokoro have designed the VG10 Migaki range to be a slightly hollow ground blade that's very thin behind the edge and to allow for smooth cutting performance and with a classy overall finish.

Beauty

The handle colour selections and patterns are certainly varied to suit a range of tastes if this style is something that appeals and we often feel when pairing handles to blades that if the handle is something particularly vibrant then it pairs well with a subtle blade.

In this case, a subtle vertical hairline migaki finish compliment the handles nicely.

In Hand

The ergonomic handle shape is comfortable and the knives in the range have a nice feel of weight in hand with the balance point being quite far back due to that full tang, integrated boster.

Durability

Hatsukokoro have specified a relatively low level of hardness at around 58-59HRC for this range but while on one hand it means you will ultimately sharpen your knife a little more regularly, that lower level of hardness will offer a good level of robustness and durability.

Ease of Care & Maintenance Tips

Ideal for a first time Japanese knife, VG10 core steel is easy to sharpen and maintain and the stainless cladding makes the entire knife easy to look after.

We recommend following our care tips and using a Japanese knife care kit for longer term care and maintenance.

Our Verdict

As always with knives that feature quite extreme handle choices, you either love them or don't but for those who do like this type of knife - the blade is well made and finished with a very subtle taper, quality hollow grind and is very thin behind the edge giving impressive performance across a range of ingredients.

The handle choices offer plenty of variety and the full tang, integrated bolster obviously favours those who prefer a knife to be balanced more at the handle than blade but if you like them, they're an eye catching and quality blade in an easy to maintain steel so tick a lot of boxes.
