First Impressions

The GS+ from Konosuke has long been one of our favourite ranges, as with all Konosuke knives the first thing you notice is the attention to detail everywhere. 

Fit and finish is top class, the handles are strikingly elegant and the blades in both the extremely light and thin laser Migaki profile and the thicker, flat grind of the Nashiji version are superbly finished and sharpened.

Beauty

Two different finishes to suit your preferences, they're both classy and give you a great decision to make between them. The migaki finish is subtle and low key and the nashiji a little darker for more contrast but still understated like many Konosuke knives.

The stylised machi gap is a common feature on many Konosuke knives and just gives a little signature flourish to the look of the knives overall.

In Hand

With the GS+ being available in two different profiles, you'll find that the significant difference between the laser migaki and the thicker flat ground nashiji finishes is noticeable in the weight and in hand feel. 

The migaki version across all the knives of that finish is one of the lightest knives we've ever stocked - this is partly because of the thin blade but also because the chestnut handles are so remarkably light they feel like they're barely there.

If you prefer a heavier knife, the laurel handles on the thicker nashiji finish balance out the heavier blades and feel closer to a Sakai workhorse profile in hand. 

Both cut exceptionally well and the extra length on the Konosuke handles balance out the blades nicely.

Durability


GS+ gives a high level of edge retention and at around 61-62HRC is hard enough to stay sharp for extended periods but also offer a good level of robustness at the the impressively thin edge. 

Ease of Care & Maintenance Tips


This is a semi-stainless knife so whilst it won't need the care of a full carbon knife, it isn't completely stainless and does develop a very mild patina along the core steel edge over time.

Our Verdict

Konosukes knives are some of the best value for money around and the GS+ range has long been a favourite of ours. The quality of the blade, the attention to detail in all aspects of the finish and fitted with a high quality handle all add up to a great knife. 

Very easy to recommend at any time, particularly with two different grinds available in the same steel!

Konosuke is a renowned knife maker based in Sakai City, Osaka Prefecture, a region with more than six centuries of blade-making history. Founded by the fifth-generation Yamamoto family and led by Kosuke Kawamura, the brand evolved from a long lineage of expert sharpeners serving Japan’s top chefs.
