First Impressions

An outstanding flat grind and very thin edge show perform very well indeed. The thicker spine and in particular above the heel with its aggressive taper push through food comfortably and smoothly. 

In Hand

The SLD is a mid weight knife across the range and the feel in hand with the thicker spine above the heel is very comfortable and lends itself well to nimble use across a range of jobs while the impressively thin cutting edge glides through ingredients. 

This range of knives has been fitted with a D-shape wa handle.

Durability

The knives in the Ohishi SLD range have been treated to around 62-63 which offers a great balance of edge durability, retention and robustness.

Ease of Care & Maintenance Tips

The core steel is semi stainless SLD so is reactive but on a fairly low level so when combined with the stainless cladding it's pretty easy to keep the knife in great order. 

Normal care instructions apply and we'd definitely recommend pairing this with one of the Konosuke saya or storing it on a magnetic rack of stand.

Understated traditional looks with the kurouchi finish paired with an excellent edge out of the box, the SLD sits at a great price point for anyone looking for a quality finish and durable steel that has relatively low maintenance needs.

Ohishi is one of the brands created by Akifusa who we work with to bring various knives to you and their ambition is to design and create quailty kitchen knives and tools by working with various blacksmiths and workshops.

Thier mission and motto: ”Oishi!” - That is what people in Japan say during or after having a delicious meal. With a different spelling and meaning but a similar sounding, Ohishi is also the name of the small village near the famous Mount Fuji, where our business was started. Finally and completing, Ohishi is the motto and brand name we have selected to build up and present our individual concept and understanding of a smart and fine-tuned knife set. Our idea was to help creating Oishi meals using Ohishi knives. We succeeded.
