Nicely balanced just behind the bolster, the smaller of the gyuto knives in this range is an excellent choice for an all round chef knife that will do nearly all the jobs you need in a kitchen and with its robust Western style handle, blade pattern and finish it's a great looking knife too.

About this range

First Impressions

We liked this range right out of the box, it's got a good level of sharpness and the handle is solid and comfortable and because of the full tang construction it has a heavier weight that a lot of chefs will perhaps be more familiar with than some of the lighter Japanese knives. 

Much like the Moonlit Waves range, this range is also sharp out of the box and can also easily be honed to be even sharper if you wish.

Beauty

The blade is beautiful, the exposed layering across almost the full height of a high polish finish really stands out and combined with the simple but well made Western style handle it's one that will catch the eye and be a joy to use day after day.

In Hand

The Western style handle and weight are probably quite familiar to many and the handles are appropriately scaled to match the blade sizes across the range.

Despite the higher weight of the handle compared to the half tang, lighter Japanese style the balance point of the knives across the range is comfortable and works nicely.

Durability

The construction is solid with a riveted, full tang handle and combined with an AUS-10 stainless steel construction edge retention should be good and combined with Sakai Takayuki's reputation for quality and experience we're sure these knives will last a long time in any kitchen.

Ease of Care

AUS-10 is a stain resistant steel so for those looking for a low maintenance knife should consider this one. Pairing it with a ceramic honing rod should be all you need to keep the edge in excellent condition for a long time. 

Our Verdict

Excellent value. 

Sharp out of the box but can be easily sharpened further, a beautiful high polish finish with a unique pattern on every knife and a sturdy and comfortable handle we recommend this range as a great first knife or an excellent addition to a collection.
