Across the range, we find they're deceptively light in hand - with the integrated bolster you might expect them to feel a little heavier but these knives are remarkably light and nimble. 

Durability

SLD is a high performance steel which offers a carbon like level of edge retention and performance combined with the ease of care of a very stain resistant steel so the 61HRC treated steel is a great combination of durability and edge retention.

Ease of Care & Maintenance Tips

As a semi-stainless steel, SLD is perhaps as close to being stainless as you can get so caring for it is pretty straightforward if you just follow the normal care instructions for any Japanese knife.

It's also very easy to maintain and sharpen in comparison to its similarly hard and high performance carbon steel counterparts.

Tadafusa is a family-owned knife maker based in Sanjo City, Niigata Prefecture, a region known for its long metalworking tradition. Founded in 1948, the company began with traditional tools before focusing on kitchen knives that balance performance and practicality. Now led by third-generation president Yoji Masuda, Tadafusa employs skilled Sanjo Traditional Craftsmen who hand-forge, heat-treat, and sharpen every blade.

The company is recognized for its innovation, developing patented heat-treatment methods and collaborating with chefs and designers. Its range includes Japanese and Western-style knives prized for their precision, balance, and minimalist design, reflecting the enduring quality of Niigata craftsmanship.
