About this range

First Impressions

Lightweight, thin and well finished at a very competitive price point for a carbon steel knife, the White #1 Tsuchime is a great option for a first carbon steel knife or foray into the world of Japanese knives.

Beauty

We do have a soft spot for an understated knife and the simple hammer finish and hazy migaki polish to the core steel is nicely done and over time.

The core steel will develop a patina and darken up while the stainless cladding remains the same so these knives take on a great character depending on what ingredients you're cooking with. 

In Hand

The oval enjyu wood handle is very light and the blades are thin so if you prefer a lighter knife then you'll enjoy this range. 

Durability

The White #1 core clad in a stainless gives you a mix of an easy to care for blade but one that takes and holds an edge well and is quick to sharpen.

Ease of Care

You've got a carbon steel core clad in stainless steel which is a nice way to get the benefit of carbon steel and developing a patina over time while you cook but without too much hassle and worrying too much about dramatic changes in appearance and high levels of care.
