Mr Ishikawa specialises in single bevel blades which he forges entirely by hand one at a time using what is known as the Nakaniida process (learn about it here) which involves a 3 part process of cold and hot forging with the aim to improve the hardness of the steel being worked.
Because the quantity he makes is small, most of his knives are sold to customers in his local market so we are honoured to be one of the few places outside of Japan to carry his knives.
