First Impressions
The Hikari SLD is a real laser from Hatsukokoro. They're some of the thinnest knives we've seen out of the box and a real treat if you've been searching for a lightweight laser with a finish we'd expect to see at a higher price point.
Beauty
The mirror polished finish on the core steel and ever so slight hazy migaki are excellent. Paired with a stylish mono ebony handle they're quite understated but when light flashes off that mirror finish it's very eye catching indeed!
In Hand
You'll find all the Hikari share a very thin profile and feel very lightweight in hand, these are knives for someone seeking that light, laser like feel.
Durability
SLD is an excellent modern steel, at around 61HRC the Hikari offers a great balance between edge retention and easy sharpening. Despite their thin profile they're durable and robust when used correctly.
Ease of Care
Unlike some more reactive carbon steels, SLD (clad with stainless) is one of the easier steels to care for as it's not hugely reactive so while you should expect a patina to develop over time on the core steel, it's not usually very extreme and quite light so while we would still recommend following our carbon steel care guide for good practice, the Hikari is a great intro into carbon steel knives.
Care Tip – Reactive Carbon Steel
The core (and on some ranges, the cladding steel too) of this knife is made using a carbon steel which can react with moisture and acids in your food and so is not stainless or rust-proof.
