If you're buying a knife for someone else and they've not given you a specific idea of what they'd like, we typically recommend a stainless steel knife and one that's a good all rounder shape like a gyuto, santoku or bunka which will do a wide range of jobs in the kitchen.
Carbon steel is wonderful but it does require a little extra care and if you're not sure whether the recipient is expecting their knife to react with ingredients when they start cutting it's usually best to choose something stainless.
