First Impressions

The first thing to grab the attention with the shirogrami #1 line is the eye catching design and unique tsuchime finish pattern along with the equally distinctive twisted pentagon shape handles. 

Look a little closer and you'll see a range of knives with an excellent flat grind and finish quality on a high performance edge. 

Beauty

We absolutely love the tsuchime finish on these knives, it's subtle but very distinctive and when paired with the large pentagonal handles and the sweeping shape of the blade it's definitely a slightly less than "traditional" look for a gyuto so might be a little a little love/hate depending on your preferences. 

In Hand

The Shirogami #1 is a relatively tall and heavier construction in both the blade and handle choice so very much for those seeking a larger and more significant feeling of weight in their knife. 

Depending on the size of the knife, the balance point varies between somewhere around the heel of the blade to quite far forward towards the kanji but despite the heavier and larger than typical handle they do remain comfortable and well balanced in use.

Durability


Treated to around 62-63HRC the Shirogami #1 core has a good balance of edge retention and robustness over longer term use. 

Ease of Care & Maintenance Tips

The Shirogami #1 range is a carbon steel core clad in stainless so is a reactive knife on the core steel and will develop a patina over time.
