SKD core steel Japanese knives

SKD steel, often used in high-end Japanese knives, is a semi-stainless tool steel known for its excellent toughness and edge retention. It’s similar in composition to A2 or D2 steel and can be hardened to around 62–64 HRC, offering a fine balance between hardness and resilience. SKD holds an edge well and resists chipping, making it suitable for both professional and home kitchens.

While it’s more rust-resistant than pure carbon steels, it still requires care to prevent corrosion. Sharpening SKD is manageable for those with experience, and it rewards users with a keen, long-lasting edge and reliable performance.
