First Impressions

An excellent sharpness out of the box and is nimble in hand thanks to the reasonably thick tapered blade and well finished white #2 core.

Yoshikane knives are widely regarded as having some of the best geometry and performance and it's entirely justified.

Beauty

The nashiji finish on the stainless cladding paired with the high polish of the white #2 core really is stunning. It's subtle and understated which we love and contrasted with a range of handles (the standard is wenge and black buffalo) we think it looks wonderful.

As the core steel develops a patina over time and darkens it will continue to provide a lovely contrast with the stainless cladding.

In Hand

The comfortable workhorse profile and relatively thick spine above the heel is good in hand and gives a substantial feel without being over heavy and is nimble in use.

Durability

White #2 clad in stainless is a popular combination for a good reason - it's easy to sharpen and retains an edge well and with minimal extra care it's going to last you a lifetime.

Ease of Care & Maintenance Tips

It's a reactive core steel so will develop a patina over time but simple care and maintenance of rinse and dry after use and you'll have no problems.

We recommend using our carbon steel care kit to keep the knife in top condition.

Our Verdict

For the money you're definitely getting a great knife, it's very well made and finished and looks superb. Yoshikane Hamono have a long established and worthy reputation for creating high quality knives and this is one of them.

The White #2 is one of our most popular workhorse profile knives and from home cooks to professional chefs, our customers always give this collection a glowing review.
