Gyuto Knives

With blade lengths ranging around 180mm to 270mm with some examples being as small as 160mm and some as large as 360mm the Gyuto is the Japanese knife shape and profile that most closely matches the Western "chef knife" and is designed to be a versatile shape for general use on a day to day basis and along with the santoku and bunka is one of the knife shapes we recommend as a first purchase.

Typically quite tall at the heel and pointed towards the tip for precision work the gyuto suits a sliding cutting style but is also efficient for those who rock chop too so it's an excellent choice for all round use and is an ideal knife style, size and shape to look at when starting your collection.

Frequently Asked Questions about Gyuto Knives

What is a gyuto knife?

A Gyuto knife is a Japanese chef's knife which is best known for its versatility and suitability for seamless slicing and cutting meat, vegetables, and fish. Suitable for both home cooks and professional chefs, Gyuto knives are a fantastic edition to any kitchen.

What are gyuto knives made from?

Gyuto knives are typically made from a wide range of high-carbon steel, stainless steel, or a combination of both (clad steel). The precise choice of steel affects the knife’s sharpness, durability, and ease of maintenance.

How do Gyuto knives differ from western style knives?

While you'll find numerous similarities between a Japanese gyuto knife and a western knife type, particularly in regards to light weight design and double bevelled edges, there are differences too. Gyuto knives typically have a thinner and longer blade, and the sharpness of their pointed tip enables more precise cutting.
