Sakai Takayuki VG10 Nashiji
The VG10 Nashiji range from Sakai Takayuki combines a proven core steel with a distinctive hand finished exterior. Each blade uses san mai construction, a core of VG10 stainless steel hardened to around 60 to 61 HRC, clad in softer outer layers of stainless steel. This gives strong edge retention while keeping the blade easier to sharpen and more resilient than a mono steel construction of similar hardness.
The Nashiji name refers to the hammered, "pear skin" texture on the blade's face, applied by hand rather than left flat and polished. It's a finish rooted in traditional Sakai blacksmithing. Each knife is fitted with an ebony handle, giving a secure grip and a finish that suits both everyday use and display.
