Japanese Damascus chef knives
Damascus steel Japanese knives are known for their unique layered patterns and excellent performance. These patterns are made using either true folded-layer Damascus, where multiple steels are forge-welded and folded, or through etching techniques that highlight the design without extensive layering. Both methods create blades that are visually striking and structurally sound.
Their popularity comes from the combination of beauty and function. Damascus Japanese knives are made with a variety of steels from stainless VG10 through to harder carbon offerings like Aogami Blue #2, offering a mix of edge retention and sharpness properties.
