Nashiji finished Japanese chef knives
A nashiji finish on Japanese knives is a traditional textured blade surface that resembles the skin of a pear, which is exactly what nashiji means in Japanese. This finish is created by leaving the upper part of the blade with a lightly hammered or stippled texture, while the cutting edge area is usually polished smooth. Visually, nashiji gives knives a rustic, handcrafted character that contrasts nicely with more refined finishes like migaki or mirror.
Beyond aesthetics, nashiji is also practical. The subtle texture helps reduce food sticking to the blade and does a good job of hiding scratches and fingerprints over time. It is especially common on carbon steel and rustic-style knives, where it highlights traditional forging methods and adds a sense of individuality to each blade.
